So here’s the cake I made for my youngest daughter’s 1st birthday party this weekend. I wanted it to feature elephants as she had lots of elephant-related presents when she was born, including a beautiful jewel-coloured elephant mobile which her uncle brought back from Nepal for her (hence the colour choices).

The top tier is coconut cake filled with coconut & lime buttercream and covered in white chocolate ganache and fondant. The middle cake is moist chocolate cake filled with mint chocolate chip buttercream and covered in milk chocolate ganache and fondant. The bottom tier is a dummy cake. All decorations are hand-made and edible.
