It is not every week that I have a request for a more elaborated and decorated cake. Although those are the ones that I really love to design and put together, I also have quite a bit of fun with simpler cakes that do not demand hours of designing and decorating and then, I also have those requests from customers who do not like sugar paste (fondant) or fillings.
So what do I do?
My attitude is always that the eyes are the first to eat. So, with that in mind, my simpler cakes (be it a chocolate, a watercress, an almond or any other type of cake) always have that little touch that make them stand out from the crowd. Its a spur of the moment thing and I often use whatever is at hand on the day. It can be some seasonal fruit, an unused sugar paste flower or leaf from a previous cake, some chocolate modelling or a combination of all of them.

Thank you Kath! I know its silly, but I do very much like these less complex cakes – they are beautiful in their own right and deserve to be showcased too. I will be posting a few more as I go through my 2013 photo albums and perhaps some new ones for 2014…
