The above cake was a labour of love for my daughter’s wedding. She fell in love with Peggy Porschen’s design and asked me to make it. I started soon after her engagement was annouced which was one year before the big day. After 3 months I made about 300 flowers – roses, stephanotis, forget me not and vintage hydrangea. Unfortunately I have to throw them away as the sugar flowers melted in the hot sweltering weather of Sydney. I started again and completed about 1000 flowers, buds and leaves within 3 months – not all of them made it to the cake. The leftovers were turned into flower sprays and placed on the candy tables and the dinning tables.
