The customer rang me on short notice wanting to order a cake for her sister. Who was coming from Melbourn for her birthday. I was told that her sister used to ride horses, was a ballerina as a girl and is a hair dresser. Also the colours she liked were silver and white. This is what I came up with. The cake is a chocolate mud cake with chocolate ganache. The horse and ballet slippers are hand made out of fondant.
