Victorian Sponge Cake

English Sponge Cake (Vanilla)

Ingredients:

150 grams (5 oz) softened butter
150 grams (5 oz) white sugar
150 grams (5 oz) self-raising flour
3 eggs
1 teaspoon vanilla extract

Directions:

1. Preheat oven to 315 degrees and prepare pans.
2. Beat the butter and sugar together until they are light and fluffy (3-5 minutes)
3. Add the eggs one at a time, beating well after each addition.
4. Sift in flour and mix thoroughly.
5. Add the vanilla extract.
6. Pour into pans and bake for 50 minutes or until the cake is a light golden colour and toothpick comes out clean.
7. Leave cake in pan for 5-10 minutes before removing to cool completely on rack.

This is a small recipe for a 5-6" pan. You can easily double or triple this recipe. It is all weighted, so just make sure that your butter, sugar and self-raising flour are all the same weight. It is a very delicious cake! I hope you give it a try!

Give it a try – it’s light and airy – the more you cream the butter the better ;). Goes perfect with jam or jelly fillings :D.

I’m fairly new to the baking world, I’ve done things for awhile, but still needing to adjust to the different ways of measuring that I’m finding on recipes. I’m needing a sponge cake to test out and practice on and found yours. You have your butter, sugar and flour in grams. How much in Cups for the flour and sugar and can you use stick butter? if so on the butter – how many sticks? Does it matter if the butter is salted or unsalted?

I use sweet cream salted butter personally. For sponge cakes it’s best to measure everything – it comes out best that way. You could try an online converter to see how many cups each ingredient translates to. Hope that helps!

Also this recipe is for a small cake – so for larger cakes, you should double it :)
