This is a 9” and 6” cake. Bottom tier is ombre blue fondant cut out in circles and placed in a scale pattern. Top tier is white fondant covered with ombre blue rock candy and sugar coral made from isomalt. Client wanted a mermaid theme cake but not in the literal sense with a mermaid – she wanted something sophisticated and reflective of the theme. She loved the cake and so did her daughter.
