White Ruffle Wedding Cake

A 9", 7" & 5" white ruffle wedding cake with a topper created from the ‘save the date’ card. Massive thanks to Jo (Ciccio Cakes) for her recipe, advice and encouragement with modelling choc. Here it is used in a 50/50 mix with gumpaste for the ruffling. It worked beautifully as I could cut the strips out (number 4 on KA) and just leave them sitting while I ruffled and adhered. No awful brittleness, I could still manipulate them a bit the next day after the 2.5hr delivery. So thanks Jo, you’re a star! Topper is all gumpaste, cake flavours are white choc passion, classic choc, rich choc raspberry
