Choo Choo Train

This train cake was for a little boy’s 1st birthday :) All buttercream with a gum paste train and fondant / royal icing bunting on the bottom tier.

Stunning! Is that Royal Icing piped onto Swiss Meringue buttercream? Do you refrigerate your cakes after you pipe the royal icing on? I’ve heard that royal icing will disintegrate if refrigerated. Also, do you have a great royal icing recipe to share? Thank you SO much!! :)

Thank you Elizabeth! I use the Wilton recipe for royal icing, and that is piped straight into the buttercream on that cake. I do refrigerate my cakes and have never ever had a problem with the royal icing disintegrating. Let me know of you have any more q’s, good luck!
