Every year I donate a Christmas cake as a prize the raffle at my children’s school. The night before Christmas is a seasonal staple in our house and so this year I decided to theme the cake round our favourite Christmas poem.

Traditional fruit cake, simply covered in marzipan and white sugarpaste and then hand painted.
