I did many Christmas cakes last year but this one was my favourite. The client wasn’t a fan of heavy fruit cakes (although I do love them personally) so wanted her Christmas carrot cake decorated to look like a ‘traditional’ Christmas cake. She loved it so much that I’m making her Dad’s 90th birthday cake for her next week. : )
