I started my "cake decorating" experience in 2010 attending some classes in UK with Vivian Lee, Eddie Spence, Carlos Lischetti, Paddi Clark and Alan Dunn.
In 2011 I started teaching sugar paste, gum paste flowers but especially royal icing that is my true passion.
Exhibitor and teacher since the first edition of the “Cake Design Italian Festival” in Milan.
In 2012 one of my cake was published in the “Sweet Tables” book of Silovoglio for Rizzoli
In the same year I opened the “Claudia Prati Academy” a small school in the province of Monza and Brianza where I teached cake decorating and where other sugar artist could share different techniques to the attendees.
In 2013 I was contacted by the national television (RAI) and I joined the team of tutors of the program “Detto Fatto” broadcast on RAI 2 from April to July 2013 by recording 18 episodes.
Meanwhile I started to carry on the dream of writing a book about royal icing as there where nothing similar in Italy and I was willing to spread this acient art with people.
By partnering with Chiriotti Editori and after over one year of studies on the history and origin of royal icing, I published the “Manuale della ghiaccia reale” in November 2014.
In 2015 I was part of the judges in the competition “Glamour Italian Cakes” SIGEP Rimini, one of the major cake design competitions in Italy.
I was a judges in many competitions in 2015 and also in the “I wanna be a cake designer” competition during the Cake Festival in Milan. In the same venue the book “Manuale della ghiaccia reale” was awarded the “Cake Festival Award” as the best cake design book of the year.
I collaborated with several companies and schools in Italy.
Thanks to the classes planned in my academy I learned many different techniques by artists like Kathleen Lange, Kristina Rado, Mary Torte, La Belle Aurore, Silvia Mancini, Tommaso Bottalico, Laura Saporiti, Antonella Di Maria, Barbara Regini.
In november 2015 I wond the first gold "international category" at the Cake international in Birmingham with a cake inspired to Venice with royal icing and modeling.
In the same year I closed the academy cause now I work full time in a bakery.
This year I was also awarded with the "best royal icing artist of 2016" award during the Cake Festival in Milan.
I recently entered the “H category” competition in Birmingham (nov. 2016) by winning a gold with a blu and white cake inspired to Christmas.
