Yes Shirley I do that with mine also and I also cut all my edges. For me it is just a matter of presentation, when a client cuts into their cake the cake is the same color all the way no brown lines if that makes sense. You will love the Agbay and i think you will find the one blade good enough. Yes be extremely careful with the blade but it comes with a great cleaning tool so that helps also.
