How exciting…and scary! I recommend taking lots of pictures and measurements if you can so the proportions are right. Look at the hotel with fresh eyes- what do you see first? Is it the sign, an architectural detail, color, awnings, etc? Make sure to include these details first. Anything that can be made of fondant in advance will save you time at the end.
