I had huge problems with condensation on fondant this year when I changed the fondant brand I’d been using to a more flexible fondant. I struggled on for months with the problem and then realised that putting the fondant in the microwave for about 10-15 seconds before kneading eliminated the worst of the condensation. It also helps if your cake isn’t too cold when you cover it. I know this worked for me. I can’t promise it will work for you, but I suppose it might be worth a try. If you do all this but you still have sticky fondant from condensation then allow the cake to dry fully before you attempt to smooth the fondant. It might take several hours though so be patient. xx
