Q&A: Stabilized whipped cream....

How stable is stabilized whipped cream that uses vanilla pudding to stable it?
Can I make it the day before I need it and store it in the fridge?

I am sorry no one has replied to your question and would love to help, but I’ve never tried stabilizing whipped cream with pudding.

If I had to guess, I would say it would work. I’ve whipped cream to top pie and had it stay in the refrigerator for three days and it still hold up well. This is just plain whipped cream, with no stabilizers added, whipped very firmly, just before it turns to butter. If I don’t whip it enough, it will only last one day in the fridge.

I just had a lightbulb moment! I HAVE stabilized whipped cream with pudding. Many times, I’ve made a cake called Watergate Cake, which is a pistachio cake with whipped cream frosting made by adding pistachio pudding to the whipping cream. It stays perfectly stable for days and days in the fridge. So, YES, I think it will work.

You are very welcome! Sorry it did not compute sooner. The Watergate Cake is a doctored cake mix recipe and both the cake and the frosting have pistachio pudding in them. It was one of my mama’s favorites and I made it for her all the time. All of us really liked it. The recipe is all over the internet, if you are interested in giving it a try. I believe it originated with Southern Living.
