Tiramisu my way:
Procedure:
Whip the cream and put it in the fridge, make even the coffee, and in the meantime will cool … Beat the egg yolks with the sugar, resulting in a mixture is light and fluffy, add the mascarpone, mixing with electric whisk to dissolve clots … Still stirring, add a little ‘of coffee and a bit’ of cherry. At this point add to the mixture the cream, stirring from the bottom upwards, and the cream is ready. I do not use the egg whites until stiff, but if you want you can add them.
For the sweetness of the cream, I set tasting during preparation, if you need to add more sugar … you do according to your personal taste.
Dipping the ladyfingers into coffee sweetened, diluted with a little water and cherry, and have a first layer in a roasting pan. Cover the ladyfingers with cream, a layer getting pretty high, wet the other ladyfingers and make another new layer that will be covered by the cream. Sprinkle with cocoa powder and put in the fridge or freezer.
The tiramisu is ready! Believe me it is a pleasure!
