Unsalted butter – 110g
Caster sugar – 220g
Vanilla extract – 1 tsp
Plain flour – 60g

Method:
1. Preheat the oven at 1600 Celsius. Line up the baking tray with the cupcake cases.
2. Mix the butter, vanilla extract and sugar in a large bowl until the concoction becomes fluffy and light.
3. Add a little bit of milk, 1/3 of the flour and an egg into the concoction. Beat it until all the ingredients have combined uniformly. Divide the batter among the 12 separate cases. You can use an icecream scoop for distributing the batter equally. Place the cases in the oven and bake for about 25 to 30 minutes. After that, take them out and allow to stand and cool .
4. For preparing reduced sugar butter cream, take a saucepan and warm the milk in it. Whisk the salt and flour into it and continue heating gently while doing so. When the mixxture becomes as thick as pudding, let it cool for about 30 minutes.
5. Take a separate bowl and mix butter, vegetable fat and vanilla in it until fluffy and light.
6. After the pudding has cooled down, add it to the mixture of vegetable fat and butter slowly and keep beating the concoction. It will become light textured when ready. Place the mixture inside a refridgerator and let it cool for 15 minutes.
