Beautifully done!! I have to make a chef a 50th birthday cake & I’m trying to stay away from something chef but yours’ is tempting to do but I always get lost on the collars when I do them.
It is easy Jazz! Make it long and overlap the extrems. You can test how long do you need it ;)
