Rosie Cake-Diva once posted a timescale for how she does her wedding cakes on fb. She would bake that the weekend before, then cover and decorate over the coming days. She described how when she first started she would try to do everything last min to keep the cake fresh, not realising it will happily keep for a week. She mentioned madeira cake tastes better a few days after being baked too. You can probably scroll through her past posts to see exactly what she said, this is just from my memory.
