Sam, well written and comprehensive leaving no stone unturned… As an ex South African I know exactly where you are coming from on this and how the budgeting works… It tough, it’s really tough and remember all too well my own tight purse strings living there…
On saying that, it’s not too unsimilar here in UK. I work to a budget and every bit I earn goes straight back into the business. I also get the choking spluttering customers when I give them a price, but I’ve learnt not to budge on it for those same reasons you state…. What the client is getting could and can never be beaten in a shop bought cake.
