This is a centerpiece projects I did in class today. The croquembouche is also used as a wedding cake in the French culture. It is made out of pate a choux, filled with pastry cream and dipped in caramel. The base is nougatine, and royal icing is piped on it for string work. I pulled some sugar to give my centerpiece a bow on top.
