An autumn tart... to celebrate the colors and flavors of this last portion of the fall season... and enjoy a glorious dessert before the beginning of Advent. From bottom to top... Base of shortbread sableé, topped with a layer of toasted pecan frangipane, one layer of speculoos cookies cremeaux, a maple-bourbon cheesecake mousse layer... and finally, a layer of glossy and sweet caramel glaze. Again, a lot of work, but worth it by the spoonful!  Count your blessings...not the calories!
