I did this cake at specific request. I like it because it is just pretty and has a wonderful balance of simple on the sides with more decoration on the top. Flavor was also great – vanilla cake, pineapple syrup, Latin pineapple marmalade with coconut filling, toasted coconut, coconut Italian buttercream!

When I did it, I got reminded of physics of insulation. Normally I keep cakes unboxed until I am giving it to someone. I put this one in a box while still working on it and then was surprised when I went to do the writing that the frosting was so soft. I then realized I’d insulated myself to softer frosting which made me have to free-hand writing which I am not as practiced on.

The person the cake was for is from Mexico. She talked about wanting a filling like her aunt used to make which was pineapple with coconut added but no corn starch or flour. She didn’t have any more info than pineapple, sugar and cinnamon and cook (and add coconut). I kept searching on the web for recipe. I winged it the first time. This time when I looked again, I found essentially what I did on my wing which was summarized as Latin pineapple marmalade. Much less syrupy and more loose than pineapple fillings on cake. I also cooked it a long time but it is tasty!
