I have done several dinosaur sculpture cakes, and I’m always excited when I get to do one that I haven’t done before. The customer wanted this for her sons birthday cake and he specifically asked for a Carnotaurus. Only needing to serve about thirty guests, I suggested we do the dinosaur head bursting through the stone.
The head is made of rice crispy treats, then a layer of chocolate ganache. The skull is detailed in fondant and fleshed out in with modeling chocolate. The final “skin” is made of a combo of modeling chocolate and fondant. The eyes are made of candy glass. The cake is a four layer 9" round with buttercream icing, then covered in chocolate ganache and covered in fondant.
