We’re not a fan of traditional fruit-cake so I made a moist carrot cake with cream cheese filling for christmas last year.

Thank you, though I can’t take the credit for the idea – I saw a few snow-globe cakes cropping up on Cake Central last year and couldn’t resist having a go! :)
