This rainbow ruffle cake was made for my gorgeous little niece’s 7th birthday. My sister did an amazing job of her party, with beautiful treats all the colours of the rainbow.

Of course, the ruffles were inspired by the amazing Maggie Austin cake, and I have seen various forms of this cake done especially in the pastel tones, but I think I prefer it in the bright colours.

I was a little worried that the ruffles wouldn’t line up with the cake inside, it’s a little difficult when you ice the whole cake in white first, but let out a big sigh of relief when it was cut.
