August 6th is Jamaican Independence every year! You can not have a celebration without a proper cake. This one is chocolate/vanilla cake with Swiss Meringue Buttercream. The top two tiers have a fresh raspberry/strawberry compote & bottom tier is the ever fabulous chocolate ganache! There is also a ganache drop & painted fondant decorations! The silhouette is the Emancipation Statue that is in Kingston, Jamaica. The shape of the island & flag are featured along with the Doctor hummingbird.
