I don’t do anything by halves; forever the optimist! :)
I was originally asked to make about 100 cupcakes for my son’s engagement; no problem! After we’d all attended a birthday party, whereby there was a cutting cake, the 100 cupcakes became a cutting cake and cupcakes in cascading tiers; yeeeeeeeeees, I can do this! What a massive learning curve. I’d practiced with a dark chocolate ganache and, in my inexperience, thought that white chocolate would act in EXACTLY the same way, much to my timely cost! I can hear you all laughing; I can too, now! An abundance of fresh raspberries and a white chocolate filling started to ever-so-gently bulge and, to mu horror, as fast as I was repairing the damage the dam was beginning to bust: I will conquer; and I did! The result of which you can see in the pictures.
I’ve learned to research much more intently before I take on a task, or have I?! ;)
