I love mermaids so was thrilled when one of my nieces wanted a mermaid cake for her birthday.

I was determined to make her tail as big and fan like as possible!

I made water droplets from glacier mints too.

I wasn’t brave enough to have a go at making the mermaid from the torso upwards, so I cheated and used a doll. I will have a go in a quiet, no pressure, time though.
