I was trying to think of something original to do for Easter that went well with my gorgeous new cake stand, and came up with this Giant Lamington Easter Egg.

Beautiful vanilla buttercake filled with chocolate ganache and covered in a runny chocolate icing that soaked into the surface of the cake, the way icing should on lamingtons of any size! Finished off with lashings of desiccated coconut.
