My cake ‘Gold Fever’ is an homage to the gold rush era of Australia’s rich history.
Did you know that the first official gold find was on 15 February 1823? Neither did I! The colonial government however, didn’t want to lose their workforce to the goldfields and kept the discovery on the down-low. The gold in ‘them thar hills’ wasn’t officially announced until 1851. After this Australia changed significantly. Convict colonies turned into cities with the influx of emigrants from around the world and, within 20 years of the first gold rush, Australia’s population had almost quadrupled from 430,000 to 1.7 million.

The cake is a 1.5 kilo nugget of chocolate mud goodness covered in ganache, then fondant, which I textured to look nugget-y. Finished off with a lovely sheen of Rolkem super gold lustre (now covering everything in my work space.)
The pick is also made of fondant. The board I covered in one packet of crushed up ‘Chocolate Ripple’ bickies to represent the earth from which the gold was dug.
