I made this illuminated cake for my mother in law. The idea for it I took here on the site from Daniel Dieguez.
It’s already end of December and it’s still no snow here in the Netherlands, so I decided to create a little of wintery feeling for my family.
The cake is Genoese sponge (my favorite) with mocca icing made from whipped cream, mascarpone and coffee (my mothers’-in-law favorite) plus some roasted walnuts inside.
The decorations are made from fondant, royal icing and homemade marshmallow icing.
Must say, I was very proud walking to her home with this cake and the birthday lady was pleasantly impressed by my creation too.
