This cake is entirely edible. The base tier is a 10 inch round vanilla layer cake and the top tier (the champagne bucket) is made from carved 9, 8 7 and 6 inch layers, all coated in white chocolate ganache then Squires Kitchen sugarpaste.
The champagne bottle is made from dark chocolate and is a life size replica of the real thing.
The ice cubes were made from a well known brand of clear mint popular in the UK – I offered isomalt in different flavours to my client but she was happy with the mints…..hopefully I’ll get to use isomalt in an order soon.
Loved making this cake but at 2 feet tall was a heartstopper delivery drive…I live in a speed hump area which..well, gives me the hump:-)
