My friend wanted a cake in the shape of Apo Island, one of the famous dive sites in the Southern Philippines. The island holds a special meaning for him and his girlfriend of 13 years; it is where they started their relationship. He thought it would be nice for them to celebrate their anniversary to celebrate with a cake in the form of the beautiful island.
(From Wikipedia: Apo Island is a volcanic island covering 12 hectares in land area, 7 kilometers off the southeastern tip of Negros Island and 30 kilometers south of the Negros Oriental capital of Dumaguete City in the Philippines. The name “Apo” was derived from a Filipino word for “grandchild”.)
The cake is carved from moist chocolate cake and frosted in buttercream. I’ve placed fondant trees, sea creatures, and other details as well as a figurine of the couple. For the white sand, I used crushed sugar cookies.
