This cake was one of those ‘nearly didn’t happen’ cakes, mostly because I was trying out a new oven and wasn’t thinking very clearly. I removed my tender chocolate layers from the oven and just dumped them onto the cooling rack without giving them ten minutes to cool in their tins and they welded themselves to the rack! Thankfully I had the presence of mind to carefully scrape the mashed crusts from the rack when they were almost cool and then put the layers into the freezer for an hour so they would be stable enough to cut and layer. I know it’s a cliche but you always learn more from your mistakes than you ever do from your successes. On the plus side the new oven is working a dream! 😄 xx
