This cake was for a surprise…so I couldn’t post it until now…
I took elements from two videos on Youtube by “Cakes Step by Step”…and the Mandy Marvelous Mold (I saw Zoe’s Fancy Cake Youtube video)…and then hand-made the roses…I saw another cake by DanielasDelights (here) and she did the center of the roses differently…so I did a few that way…and I actually like it better…so the rest of the roses are done that way…and I think I will be doing all my roses this way going forward…there is no “bud” in the center…it’s two thin petals closely wrapped around each other (least that’s the way I did it)..and it makes a wonderful center…
My dear friend loves “red & black”…and although I was going to do a different cake for her…I had to stop myself and say…what would she like…and so it changed everything…loved it!
I will need to get the pearl mold that has 3 strands or more at a time…b/c I used the Wilton mold and it only had 1 strand and it took me 3 hours to cover the bottom tier…so lesson learned…also I didn’t have time to order it anyway…getting it now for next time…as I see I will do this again for sure :)

I use the torta method for ganaching the cakes…with one change…I place a round piece of parchment under the food grade plastic cake board on top…so when I remove that…it doesn’t take off any ganache in big chunks…
I made a cake box for transport…and I save packing material…I found styrofoam corners…and it worked out great…wish I had more of that…the box is perfect!

Wow this is a stunning cake. And organic too which is amazing. I know what you mean about heading off on another direction when you are in the zone and then having to hold yourself back and focus on what the recipient of the cake would want. Love this – new follow from me x
