This being a carrot cake most would just decorate it with some iced carrots on top and maybe a few nuts. But being a special birthday cake I wanted to jazz it up a bit. So I did some fancier piping and added a combination of red and white sugar roses and covered the sides in chopped pecans. The cake itself is a classic carrot cake with his and raisins and covered in a c cream cheese butter cream.
