In 1972 I took a Mexican cake class in California with Senora Marithe de Alvarado. This was not a hands on class but 5 days of Senora and her assistant making amazing cake dummies with Pastillage. At the end of the class they had a drawing for the cakes and I was thrilled because I won Madame Pompedeur. I also bought all of her plaster face molds but sadly over the years they disintegrated and had to be tossed away. They really were the nicest I have seen.

It is, isn’t it? My son was born 3 weeks after this class so I was happy it wasn’t a hands on. It was nice to just sit back and watch someone else create.
