This year my daughter requested a castle cake. So i took on the challenge and designed and created this for her. 7 time consuming towers, a little girl which i did to look like her (first ever). I had prep’d nearly everything for the cake a week in advance, then the week of the birthday came. This week was a cake decorators worse nightmare. 95% humidity, and rainy days, my royal icing was melting, everything was melting, things i had prepared for another cake had lost their structure. I live in a 50 yr old house with no insulation, no luxuries like an aircon and old tin roof. All i could do in the end was put it in the spare fridge. The cake hadn’t even been out of the fridge for 5minutes and things on it started to melt. In the end i got there, and the cake itself was that good that i had none left by the end of the party. Everyone that attended where still gobsmacked at what I had created. And I hope you all like it aswell. And for those wondering where I live. I live on a cattle property 70ks from the nearest town, in Central Queensland, Australia where in summer the temperatures can get upto 45 degrees and thats just outside the house
