When my sister asked me to make her birthday cake I couldn’t resist making her favourite biscuit / cake but on a bit of a larger scale. So here is the xxxl Jaffa Cake pictured with an actual Jaffa for comparison.
The base is a 12" round and yes it even has the orange jelly bit in the middle which was the trickiest part ..

Thank you ….the jelly was made with fresh squeezed orange juice and gelatine … took a couple of attempts to get the size, shape and consistency right but got there in the end using a large glass casserole dish to mould the jelly ..xx
