RE: Icing sugar on fondant! How to remove?

I use shortening for rolling out fondant. Spread shortening (Crisco, Trex) very thinly onto the rolling surface, then wipe most of it away with a paper towel. If you use sugar, however, and it leaves a residue, you can lightly steam it and the sugar will disappear.

Sandra, that’s interesting! I’ve never heard of using shortening as part of the rolling process. I have used it, usually Crisco to smooth out seams. I use corn starch ( a very light hand!) for rolling out a fondant / MC mixture and have never had problems with cracks.
