I put all my cakes in the fridge, the cake sweats because of the temperature change in the air, but it also gets used to the new temperature pretty fast. Take it out an 1 hour before you serve it and it will adjust, keeping your house cool before you take it out helps a lot too. As Goreti already said, just don’t touch it, you will leave fingerprints all over it and they can’t be removed. If you are scared about cake sweating too much you can put it in a cardboard box and then cover the box with a plastic bag and put it in the fridge. When you take it out just leave it as it is (in the box and the bag) for a while and it should not sweat… Another thing, if you want to speed up the drying process you can put a table fan close to the cake and very carefully dry it out….
