Fondant in the fridge

I am making my kids bd cakes and I would like to cover them in fondant and the filling will be chocolate cheesecake. I would like to make them a day in advance. Would it be ok to finish them at night and put them in the fridge till next day?

I have not tried putting a fondant cake in the fridge but I have heard yes you can put it in the fridge. I have seen suggestions of putting the cake in a papertowel lined box and when you take it out of the fridge do not touch it while it is sweating. It will dry and then you can touch the cake.

Hopefully someone who has done this will see the post and give you the exact tips

I refrigerate my cakes all the time and have never had an issue. I use homemade marshmallow fondant (not sure if this would make a difference) I cover them in paper towels and do not touch them when I take them out of the fridge.

I put all my cakes in the fridge, the cake sweats because of the temperature change in the air, but it also gets used to the new temperature pretty fast. Take it out an 1 hour before you serve it and it will adjust, keeping your house cool before you take it out helps a lot too. As Goreti already said, just don’t touch it, you will leave fingerprints all over it and they can’t be removed. If you are scared about cake sweating too much you can put it in a cardboard box and then cover the box with a plastic bag and put it in the fridge. When you take it out just leave it as it is (in the box and the bag) for a while and it should not sweat… Another thing, if you want to speed up the drying process you can put a table fan close to the cake and very carefully dry it out…. I got this tip from Sharon Wee.

Thanks a lot I’m gonna try your tips. 😊 do u think if I cover it with the paper towels or a plastic bag, will they get glued to the cake once out of the fridge? It’s kind of hard to find a box that big to cover it.

I would not have anything touching the cake in the fridge or outside of the fridge, if you have one of those cake storage containers, you can put it in that but, then you will have some sweating when you take it out. But don’t worry, it’s not that bad and it passes, you cake will be fine as long as it doesn’t go from super cold to a tropical heat … Why a cardboard box is the best is because it draws moisture to itself, so instead moisture getting on your cake, it gets to the cardboard. A lot of people are scared of sweating cakes but it passes, just keep your house cool and let it adjust before you serve it :)

I refrigerate my cakes, fully decorated all the time. I do however box them up and seal the edges with painter’s tape to help seal out the humidity. When I remove it from the refrigerator, I don’t open the box for at least two hours.

Couple things I want to mention though…
We make our own fondant that we have a special recipe for but one thing we noticed is that after removing glucose from the recipe, there was a massive reduction in the cakes sweating. Glucose is a big culprit in pulling moisture from the air. Also another factor is the size of your cake. If you have a massive cake thats just come out of the fridge, and you coat it with fondant, it is more likely (depending on humidity) that it will sweat. But worst case scenario, you just need to leave it in room temperature for a few hours and the sweat will eventually dry and go away so be sure to give yourself enough time incase this happens.
