I have had the same thing happen tom e – and I have frozen completely finished cakes and had them come out just fine. First time was when our daughter woke up sick on her birthday and had to freeze her cake – then I had this situation you had. What I did was freeze the cake unwrapped overnight, then wrapped in Saran. When I needed to thaw, I put it in the fridge for 2 days, and then for one day on the countertop with a fan blowing on it to take care of condensation. Sorry I didn’t post earlier – maybe the fan would have helped you.
