re: Orange cake

Hi Liliana… I thought someone would have jumped on this by now.
I do not have an exact recipe as such.
I boil a whole orange (to release acid from the skin). I then remove the seeds and blend the whole thing to a pulp, skin and all.
I add this to a basic buttercake mix, with a couple of extra eggs. You might need to add a bit more flour as well, if the consistency is too wet.
It gives a nice intense orange flavour.
For orange poppy flavour, I just add poppy seeds to the same mix.
Not an exact science sorry!… and I am not an expert. Just how I “wing it”. ♥
