Leftover smbc almond cookie recipe

Hi all,

Had some lovely vanilla bean smbc left over and just tried this… 10 mins later I had the most perfect almond vanilla cookies ever – crisp and a little chewy on the outside, fluffy and soft in the middle, and the whole kitchen smells of vanilla <3 I wanted to write the recipe down, so I thought I’d do that here and share with you all in case you wanted a fast, tasty treat to make with your leftover smbc :)

  • 1 cup almond meal
  • 2 tbsp egg white (1 egg white)
  • 4 tbsp smbc (I used vanilla).

Mix everything together
Fashion rolled teaspoons of the soft paste into little cookie shapes
Place on a lined baking sheet
Bake at 165 C for about 10 mins or until starting to turn golden
Allow to cool
Try not to eat all of them at once XD

The nice thing is they should automatically be sweetened to your taste/with your choice of sugar as your own bc recipe had been used. Hope you enjoy them!

Angela they are! Reminded me a little of those amaretti biscuits you can get, but more a vanilla flavour than the overpowering almond. Thank goodness I didn’t make too many lol x

I can almost smell the almond, they look delicious x
