Gluten Free Brownies

Ever since having my son, who has multiple food allergies, I have ventured into gluten free and dairy free baking. The thought of gluten free has always seemed unappealing to me as I have tried and tasted store bought items that have been far from tasty. From experimenting and tweaking different recipes, I am pleased to say that I have come up with some rather great, yummy, gluten free and dairy free alternatives to the delicious classic desserts we all know. This recipe of simply gluten free brownies is moist and chewy and am certain no one would ever suspect them to be wheat free, gluten free.

This recipe yields one 8×8 inch square pan.

Ingredients

  • 1/2 cup oil
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup rice flour
  • 1/4 cup tapioca flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/3 cup cocoa powder

Method

  • Preheat oven to 400 degrees. Grease 8×8 square baking pan.
  • In a bowl stir together the sugar, oil and vanilla extract. Beat in the eggs one by one. Next combine the rice and tapioca flours, cocoa powder, salt and baking powder. Stir mixture until well blended and pour into pan.
  • Bake for approximately 25 minutes, or until a toothpick inserted comes out clean.
