Our zoo director, Satch, won the most prestigious award in his field. The PR director for the zoo asked me to make a cake with the theme “Hats Off to Satch”. The invitation had a picture of an elephant holding a safari hat in his trunk. That was my inspiration.

It took a LOT of figuring out, planning, & trial & error, plus a lot of help by others more knowledgeable about structure than I. But I am so excited & thrilled with the end result! And I am proud to say I did all the carpentry & PVC work by myself, too! :-)

The main cake is red velvet with cream cheese buttercream filling, & the hat is carrot cake. Both cakes are iced in white chocolate ganache & finished with fondant. Everything is edible except the internal structure of the trunk!!

When I saw Riverbanks Zoo and being from SC, I did a double take on the picture. Great job.
