Yesterday I finally got to see my best friends tie the knot. I had the honour of being maid of honour, my husband was best man and my 3 kids were bridesmaids and page boy and I also had the very special honour of creating their wedding cake. For me this was by way the hardest cake I have ever made. I sketched the design of the cake about 7 months ago but just never felt 100% satisfied with it. After my last cake went out last friday I sat down, re sketched the cake and finally felt it could just be good enough for what are the most amazing 2 friends a person could have. So monday morning arrives and with 10kg sugarpaste, 3kg gumpaste, 17 dowelling rods, trays of wired flower petals everywhere, lustre dusts and paints imported from the USA (thanks to a very special lady, you know who you are x), 240 Swarovski crystals and not to mention cake, lots of cake I went into a kind of lockdown mode. I don’t think I have ever worried, stressed, ahhhed, oohhed and swore at a cake so much in all my life. The building stage was the problem. When I sketched the cake it had 7 tiers, 1 of those was to be a 6" diameter, 2" tall separator halfway up and also a ivory and pink ruffled tier 3rd from the top. The first thing to go was the separator, I started to think it just might not be a good idea what with gravity and stuff. The next thing to go was that ruffled tier. I knew that the cake would have to be delivered to its destination in 2 halfs because of its size but didn’t quite realise until I stacked those 2 halfs on friday just how tall this cake was gonna be. OMG it was huge when I stacked the 2 halfs, I had to stand on a big box just to see the spirit level on the top. The problem for me was that I had to set the cake up on the friday evening and leave it there all on its lonesome till the wedding party’s arrival the next afternoon, which started to freak me out slightly, I had visions of walking in the next day with the bride and groom to a collapsed mess of cake!! So about 4 hours before the delivery I decided to take out a tier. I delivered the cake to its venue in the 2 halfs, stacked it and and added the flowers. I must say when I’d finished I was so pleased with the outcome, I thought it looked beautiful, just like the bride would! After a restless night of sleep, wondering if the cake would be ok all night, hoping the flowers would stay in place, almost ringing up the hotel and asking them to go and check on it at 2am, we went and did the whole amazing and beautiful church thing (ok I admit I did ring the hotel when we were all in the hairdressers the next morning and they said all was still good) we arrived at the hotel for the reception and I took my best friends to see their cake, the beautiful bride kept her eyes closed all the way till she was stood in front of the cake and when she opened them the look on her face was worth every hour of stress and hard work, so much so I burst into tears….. what a div!!! xxxx

Thankyou everyone!! I think I ended up making 4 Dahlias, 4 magnolias, 4 peonies, 12 roses and about 20 hydrangeas, all individually wired and took around 20 hrs from start to finish. x
