Gaudeamus, from the Latin Rejoice. A very special cake, the most special cake I ever made! The special occasion was the investiture ceremony of 7 Benedictine novices, the perpetual vows of three Benedictine nuns and the First Holy Communion of my little rascal. I tried to make an elaborate cake to reflect my deep joy... My own daughter is finally among those lovely doves in white veils. The cake had a tier of chocolate cake with chocolate fudge icing...Mother Abbess' favorite, and one tier of honey-beer fruitcake, to please the Brits and Dutch sisters that must be homesick. The cake was covered in fondant and decorated with Lambeth style English overpiping. The details were in fondant, pastillage and dragees. I included the Marian emblem portrayed in our local parish in honor of The Blessed Virgin Mary. The flower in the middle is a Passiflora Edulis, representing the Passion of Our Lord, the beauty of my home country and my daughter's favorite fruit. Praised be Jesus Christ.
